Garden herbs vinaigrette



Finely chop sage, rosemary and thyme and heat briefly in a pan with olive oil so that the aroma of these herbs can be released. Put the herbs in a tall cup and top up with olive oil. Add the chives, parsley or finely chopped spring onions, lemon juice and zest and Dijon mustard. Fold in some regional honey, mix vigorously and season with salt. Wonderfully suitable for tomato or green salads.

Ingredients: For 4 people

  • fine salt
  • 1 tbsp regional honey
  • 1 bunch chives or spring onions
  • 1 bunch parsley
  • 1 organic lemon
  • 2 tbsp Dijon mustard
  • 100 ml olive oil
  • 3 sprigs of thyme
  • 3 sprigs of rosemary
  • 7 sage leaves
