Baked potato skewers with Azores cheese on the purée of grilled red peppers

Preparation

Core the raw peppers, halve them and place them on an oven tray. Douse with a little olive oil and stew at 180 degrees, 30-45 minutes. Then peel off the skin, put the pulp in a blender, add garlic, pour in olive oil and purée. Boil small potatoes al dente in salted water and drain. Put three potatoes on a wooden skewer. Sprinkle these potato skewers with grated Azores cheese and bake in a baking dish for 5-10 minutes. Center the pepper butter on a plate and place the skewers on top. This is a great side dish with short fried food.

  • 4 wooden skewers
  • 3 garlic cloves
  • 3 red peppers
  • 150ml olive oil
  • 100g Azores cheese
  • 12 small potatoes
